Porchetta is an event, not a dish. A Tuscan tradition, porchetta is a whole pig stuffed with aromatics and and spit-roasted for hours.
Canvas is roasting a suckling pig on la caja china and it will be tasty as H-E-double hockey sticks -- in fact, unctuous as a friend of ours would say.
A fabulous couple will be hosting us at the Pacific Cannery Lofts in West Oakland. The event will feature a butchery demo as well as food-inspired choreography. This is one dinner you won't want to miss.
We're also offering up half a pig at $50/per half to two lucky pork-a-holics.
